Diablo 1 and 2
There are soooo many really awesome game soundtracks out there...
The Hitman games got great soundtracks (except Absolution, that was unimaginative crap):
The whole soundtrack from Silent Assasin
Contracts main theme just got the whole atmosphere of the game spot on
Also in Contracts you can hear some melodies from Blood Money but with distortion which is a really nice touch considering the setting of the game.
Finally after Absolution we got some exciting themes again, even if it sounds like it came straight out from an action spy movie.

The two MAFIA games got great main themes:
Mafia 1
Mafia 2

I really liked the main theme of Batman Arkham City

Indiana Jones and the Emperor's Tomb soundtrack captured the feeling of the original films soundtrack nicely.

I have to say, GRAND THEFT AUTO 1!

Vampire Redemption and Bloodlines. I loved theirs. Especially bloodlines, which featured the work of real music bands (but i also hate it for this, since it gave to the game copyrights hell).

Blade of Darkness.

Those are my top ones in the list. I am sure i had a bunch of others, more games that i am certain they captivated both my ear and interest, but now at early dawn, i am lazy to think harder.
Myst II-IV are probably my favourites.

Interesting example of sound progression in those three, just in terms of how music evolved throughout the series.

In terms of Jack Wall's body of work (and as far as his input on the Myst series goes) I know most critics consider his work on Myst IV to be something of a career defining moment (and I'm not really disagreeing) but there's something about the music he did for Myst III that just grips my attention unrelentingly.

Dynamedion - Madas Licht (Drakensang: The River of Time)
Sacred 2 Blind Guardian concert They actually incorporated band members and small quest in game story :) . Also there is Brutal Legend with an amazing metal setlist.
