I used to have an informal list but the realization has hit that I have less and less time to play games these days (played maybe two hours total in the past month), and there is a giant backlog that keeps poking me in the ribs.

I'd send a message to GOG support asking them to look into Rails Across America; that seems like something that could come here pretty easily, if the publishing rights are still with Strategy First.

And I think Nightdive was looking into Dust: A Tale, but you should tweet them and see. Heck, you could tweet them your full list. :)

I don't have a list specifically for GOG, but I do have a general list. I don't really give a shit if these land on GOG, or Steam, but I'd buy these 10 games again given the chance. So with that said, games on this list will probably not be sold anywhere, instead of just wanting DRM free versions.

1. Soldier of Fortune 1 & 2 (Rights hell.)
2. No One Lives Forever 1 & 2 (Rights hell.)
3. Halo Master Chief Collection (Console exclusive, but with the release of Halo Wars Definitive on Steam, things are looking up a bit for this coming to PC perhaps?)
4. Wolfenstein '09 (Used to be on Steam, got taken down, I assume because it switched hands from Activision to Bethesda?)
5. Prey '06 (Used to be on Steam, got taken down because they ran out of keys, never came back. With the new Prey
coming out, it would be cool to see a re-release of the older one.)
6. Resident Evil 3 (Since it will be a while before we ever get a REmake of 3, I'd kill to play the original again.)
7. Onimusha (The first Onimusha is a fantastic RE style game. Needs to be brought back!)
8. Metal Gear Solid 1-4 (Good MGS ports to PC would sell like hot cakes.)
9. Silent Hill 1-4 (Ditto.)
10. Powerslave/Exhumed (The same person behind the engine of the recent Turok remasters and the D64 port were also doing a port for this, but unfortunately someone got mad and ceased his development.)

Honorable Mention: Command & Conquer series (I know this is on Origin and I own it there, but I'd prefer it on GOG or Steam.)

I'm a big AMIGA fan, I am assuming you are too. You should check Amiga Forever out, you will be able to play some of the listed games in the best possible format.
Just one: Fire Fight, a 1996 Windows game, mix between Shmup and an isometric action game. One of my fav childhood memories, really obscure too, but it was published by EA so... yeah, fat chance. I'd wonder if they've even kept a copy.

Besides that, my whole list would be a mix of japanese Shmups (Mushihimesama, DoDonPachi, etc) and visual novels (DRM-free World End Economica!), neither of which holds good standing among GOG curators. So, even worse chances than EA-owned abandonware.

Just BTW, but MGS1 has an excellent PC port done by Microsoft in the early '00s; you could pump the resolution sky high, performance was excellent, it worked really well with a Sidewinder Gamepad, and it was a port of the Integral version, with the full 300 VR missions instead of the meager 10 of the original. They even kept the fourth-wall-breaking bit about the game box from the PSX game, unlike some later editions. I remember buying three copies :D one for playing, one as a gift for my best friend, and another to keep... y'know, just in case. I think it's still in mint condition behind my brother's stereo.

MGS2 also had a PC port but it wasn't by Microsoft, and I remember it wasn't nearly as good, with the crashes and performance problems common to console ports from back then.
