timppu: Wizardy Gold (=7, I think). I recall this was also rather deep, but was still quite interesting. I think I even made one ninja member in my party.
Many players actually prefer the DOS version of Wizardry 7, primarily because of bugs that are only found in Gold and not the DOS version.

BG2 doesn't qualify, as you pick your party (except the main character) from various recruits who have predetermined names, stats, and classes, and have associated sidequests; they're really the developer's characters, not the player's characters.

The Pathfinder games don't qualify for the same reason. While you can recruit mercenaries, they're not the default way of playing, as you need to pay for them and they don't come right away.

I also don't count Final Fantasy 5, though that's getting to be more of a gray area. Your 4 characters are premade with their own personalities, base stats (though those don't really matter, except for agility when you want to control the order in which your characters act since that's deterministic in 5), and stores. The only thins you can customize are classes (called "jobs" in this game) and secondary abilities, which is still enough to make it feel more like FF1 or 3 rather than 4.

Solasta: Crown of the Magister. For me, it feels like a modern Icewind Dale. I had a blast playing it. All custom characters.

Wasn't there some kind of "workaround" for that, where you started a "multiplayer" game where you could create characters from scratch? Or was it only the first Baldur's Gate?

Then again I have only read about that, in both games I used the "story characters".

Thing is, you need a workaround for that, and most players tend to use story/developer-made characters, so I do not consider it the default mode of playing that game.
Storm of Zehir or Tenebrous depths. I found myself playing these more than iwd1/toee/word of xeen, etc.
