I'm new to PC gaming and saw a message pop up that I accidentally skipped regarding patches and save files. If I install the latest patches, will my save files still function properly? I'm thinking the message probably said that if I play something on a patch, and then revert the game to an older state, it will no longer work, but I want to be sure.

The warning, as you guessed, is that your saves will not work with previous versions of the game. Saves are forwards compatible, but not backwards compatible.

One thing you might want to be careful about, is that some people have mentioned that saves can also become reliant on DLC if you have them installed, but try to play without them later. I haven't tried this myself.
