So I see there was a linux client and (more importantly to me) a Linux dedicated server. Did anyone have experience with those (and the GOG version)? I'm hoping to throw the Linux dedicated server up on my LAN at home and just leave it running so my roommates and I can connect when we're around.

I'm going to speak by the original release of NWN1 as I don't know for GOG work.

NWN1 was made for Windows and Linux (Powerful C++) and therefore was very easy to run the servers on Linux machines.
The cds had the Exe for windows and the binaries for the Linux.

And then.... Atari made NWN2 with C#...

The core game itself is still written in c++ actually. The problem is the use of DirectX (vs OpenGL in the original), which is windows-restricted. They did use C# for the toolset though.

We run a linux server and we run the game as DMs and PLAYERS on a linux machine too. Great stuff!
