Why always war in games?
For all the reasons already explained here, but I also think that the majority of games call to some sort of primal instinct since the creation of weapons: shot moving things.
I've never seen FPS as nothing more than a modern version of the old "shoot the ducks" stands in fairs.

jungletoad: Mainstream games get increasingly realistic, dramatic, and finely tuned in their genre, but there aren't many that really travel new ground.

An example may be Avatar, nothing overly original. It's just well done with newer technology. Games are following movies in this aspect in that many games will have certain similar others no matter what nowadays.

Play "The Path". Then get back to me. Trust me, there's plenty new under the sun, you're probably just not playing it. Most of it hasn't seeped into mainstream games yet.
I played Space Rangers 2, that's a convention breaker. Problem is each 'part' of SR2 is similar to another game, whether it be the RTS, arcade, or turn-based action screen. It's a hybrid of genres. I noticed there are some games that blend genres in an attempt to be original, FPS-MMO's like Anarchy Online come to mind. There's also the FPS-RPGs coming about, RTS-FPS like Savage and GMod is a new genre of FPS-Builder games.
There is an infinite amount of possibilites but in the end many games will have certain similar aspects and can make the market stale without major innovation. As for The Path, it's an adventure game with emphasis on lack of controls from what I heard which is novel because it's not used often in games. Further reading just now makes me get the impression that the story a rip of Little Red Riding Hood in every way but name and doesn't come across as truly original to me, but to each his own as I don't do adventure games much. I do like the Chzo Mythos, which has an original story but gameplay and all is like other point-n-click adventure games.
I'm not arguing, but I think what you mean by 'original' is story and content which almost always is original in different games. I was referring to 'genres' not being original anymore with core gameplay being so similar games are not refreshing anymore, so I hope to clear up confusion.
