I purchased the Pay What You Want Interplay sale, of which I already owned several games. GoG sent me a gift key, which apparently all of the games are attached to. I would like to do a give away, but I want to see if I can give each game away separately, or do I have to do the whole lot?

You can only give away the whole lot. But a recipient can only redeem the games he doesn't own. The "remaining" games remain valid to be redeem with that key. This goes on until all games are gone.

generally speaking you would have to give the whole key and if there are games the contest winner has they can pass the key on with the duplicate titles.

It has been known that sending a support ticket to the GoG staffers they can split the keys so you may be able to give the games individually
