Does the sound work on all the dos games gog uses?

It should. They'd hardly sell them otherwise.

Most DOS games would be run through DOSbox, which takes care of sound.
So you can pretty much assume each games does have it, but check the support articles per game and each games sub-forum for any sound related issues if you feel unsure still.
