I've noticed with some old DOS titles in the catalogue have "Windows XP/Vista" in the OS requirement, for instance Descent 1+2. Has GOG been porting over games to run natively on todays Windows enviroment?

They run through DosBox.

Yep, all GOG games are supported by Vista and XP.
Though you may need DOSBox (see affiliate spotlight) to run some of the older ones.

It's a mix.
Some run through DosBox (already implemented in GOG's installer)
Some through ScummVM (also already implemented)
Then some simply run natively on both XP and Vista.
What they use though, is not noted on the game page :)
