Because some users still use FAT32 where the max file size is 4Gb, that's why all installers are cut into pieces.

EDIT: Sorry you probably meant the single click to queue all the files. I think it requires additional development and GOG is not interested.

Again you can't download one big zip installer for Witcher 3 in 1 file because of its size and file system limitations.

It's not hard to queue them, just a little click.

Easy for you to do, but not for a digital store. Each and every step should be properly "analyzed" and "approved" for additional man hours tweaks and testing.

I think it would be highly inconvenient to host additional zip archive file ready for download for all the games, especially when this file will be much bigger than separated 4Gb pieces. Also those separated installer files are already compressed.
So double not good.

Do you mean in addition to the normal way or JUST single click downloads only? If the former then fine, but not so much for the latter.

Why? Because not everyone needs every file that's available in that list and it would make for higher bandwidth/data consumption for users and also for gog.
