My last 2 purchase on Gog are actually DLC that gave additional story line, Layers of Fear: Inheritance and Hard West: Scars of Freedom.
Additional areas/characters I pretty much always buy for games I like. Cosmetic stuff, extra starting items or free levels (not in-game areas, but character levels) I usually ignore.

The exception is for developers I personally want to support, in which case I see DLC (including the cosmetic stuff) as a tip jar for me to drop some additional bucks in.
Horse Armor :D

Well, it depends. I always grab something with decent amount of content (overall). Also intrested in stuff, related to cosmetic changes (e.g not smexy skins, but ability to change the look of your outfits to any other. Say - illusionist NPC in grim dawn). And in love with alternate game modes (endless dungeons, tower defences, arenas and such).

Aside from that - as perfectionist, sooner or later I will buy all DLCs anyway (even said horse armor, yeah). Its just a matter of discount size and my state of wallet irl
The expansion pack kind, meaning the ones that add substancial content to the game (for example, i'm waiting for the UnderRail expansion). I approve that kind of DLC, but it doesn't mean i'm always buying it either. One thing is for sure: i never buy cosmetic stuff, soundtracks, artbooks, random content (a new area, a new weapon etc). Having said that, i won't buy the base game if i suspect there will be DLCs for it to be complete (for example, a remake of a strategy game where some nations that existed in the original didn't find their way in the remake, only to be released as paid DLCs).

R'amen, brother.

Occasionally, if I really want to support a developer (MuHa of Thea's fame were definitely on that list for me), I'll buy things like "Coffee for Coding" or even skin DLCs, but that's a pretty meta "I want to throw more money at the developer" purchase.

I'll still buy smaller "gameplay" DLCs, but that's a very calculated judgement of value against the asking price. Mostly I get those at a steep discount.

Really dislike current DLC practice, in general. Too many originally-planned elements end up getting cut out and sold separately. Paradox, as an example, definitely "shines" in that regard. Long on my "wait till 'final definitive honest to gods cross my heart and die' edition then buy at a 75% discount and make sure to firewall because forced telemetry" list (though even then you can still get burned, see EU III "Complete" right here on GOG).

Mostly, the more DLCs I see (and especially day-1 DLCs, and I don't care if they are just "skins" or whatever), the less likely I'm to buy the game in general, and at anywhere near the asking price specifically.
