You're simply going to have to concede if you can't back up your claims. Disagree with the facts if you want but FNV doesn't hold a candle to F1 or F3.

No, because you haven't presented any. Is F1 a great game? Absolutely, but including F3 in even a whiff of that company, and not only that, you claim it's also better than 2? Typical Bethesda hating sheep. F2 is a disgrace to the series and the genre, of course F3 is better. F3 is good because it recreates the atmosphere of F1.

Genesis collection, they probably are among the DRM free games sold on Steam and have a damn introduction to retro... Personal suggestions and favs : Beyond Oasis, Shining Force, Wonderboy V
Reflections on the topic and the posts in it:
Old games are hard to play for 2 reasons- outdated graphics, and outdated UI/controls/quality of life features. If you want games that overcome both these issues, some of the recommendations in this thread seem a bit odd (coloured by nostalgia, if you ask me).

For example, I'm not sure about the point of recommending Doom. Even if you use a source port like GZDoom that improves the UI and controls, I'm not sure what the original game has to offer. And this is from a guy who played the Dooms when they originally came out. The same for similar early psuedo-3D FPSes such as Dark Forces. You might wait for the "enhanced version" of Blood in the works, if it can be made easily playable for today's audience, it is a great game.

Likewise, I'm not sure about recommending most old strategy games. I play a couple here and there from the old days, but if I hadn't played them ages ago, I don't think I'd be able to get into them today. I especially giggled when someone recommended x-com (even openxcom). You're not going to be able to get into the original x-com game today.

Really not sure what the point of recommending NES/SNES games to you is. You're not going to be able to play them legally if you don't already own them (and if you do, you'd have played them already).

Since you mentioned not being able to get into Fallout 1 and 2, I don't see the point of recommending the the old Infinity Engine games (Baldur's Gate I & II, Icewind Dale I & II, Planescape Torment, etc.) or similar styled (Arcanum: Of Steamworks and Magick Obscura, Neverwinter Nights). They may have been incredible games when they came out, but they're really clunky to play today, even with the enhanced editions. I own most of them, but the only one I was able to play all the way through and enjoy was Planescape: Torment (I played it relatively recently, but before the Enhanced Edition came out), and that required a LOT of patience.

Likewise, earlier 3D games, even well-lauded RPG/RPG-hybridss like the older Divinity games, Deus Ex, Thief games, Dragon Age: Origins, Gothic games, Morrowind (and I love Morrowind to bits, but I'm not sure I'd recommend it to someone as a easy game to get into today), where they hadn't yet figured out the optimal control scheme, and the early 3D graphics REALLY take getting used to- there's no point recommending them.

There are a lot more suggestions for oldschool STLYED games that are modern but with an oldschool aesthetic, but I don't really see them as a gateway to being able to enjoy older games. You play them now and then play the older games later, you'll just be frustrated at how the older game didn't have that convenient feature/control system/UI.

My Suggestions:
Since you mentioned you enjoyed some adventure games, and adventure games are genre that mechanically and UI-wise haven't really evolved all that much, I think you can enjoy most of the LucasArts adventure games- I'd strongly recommend:
Loom
The Secret of Monkey Island
Monkey Island 2: LeChuck's Revenge
Indiana Jones & The Fate of Atlantis
Sam & Max: Hit the Road
Day of the Tentacle
You might also enjoy Full Throttle and Curse of Monkey Island, but I dunno, I feel that despite coming out after these games, the different UI they used (where you to interact with something on screen, you have to click the mouse on it, a UI pops up that obscures it, you have to hold down the mouse button, drag it to the interaction you want, and release), makes it more problematic to play today.

The Remaster of Grim Fandango solves the UI problems the original game had, and I feel that the theme and art style work well with the older 3D graphics, so I'd recommend it as well.

2D Platformers are another genre that I feel don't age too badly. While I am not sure I could recommend something like Another World, which while being a seminal classic, has an old-school die-constantly frustration to it, stuff like Earthworm Jim 1 & 2 is very recommendable. I haven't played Jazz Jackrabbit recently (in the past decade), so my opinion might be coloured by nostalgia, but I can't imagine them having aged too badly, so I'd also venture a recommendation for Jazz Jackrabbit 2.

Aside from adventure games and platformers, if you're in the mood of FPSes, and you don't mind a slightly creepy/horrory vibe, I can't recommend System Shock 2 strongly enough. I played it 2-3 years ago, and although I used a few graphical mods (3D games from the era are REALLY ugly), I was surprised at how well the interface and controls held up, and it is a great game otherwise. A Source port has recently come out, which I'm assuming only improved playability.

As far as the whole Fallout 3 vs Fallout: New Vegas kerfuffle going on, in my opinion, Fallout 3 has the more enjoyable world to explore, but Fallout: New Vegas has better story. Go with whatever you prefer (I preferred Fallout 3).
