I saw some posts that people that are running MacOS Catalina or newer that some applications that do not work on their system anymore. The reason is that those application use an outdated Wineskin Wrapper. This guide shows the basics on how to install a Wineskin Wrapper and Engine and install a game into that wrapper.
The game I will install is Icewind Dale 2. GOG offers a Mac version for it, but it does not work for the reasons mentioned above. The process basically works for every windows game, although often you have to fiddle around with settings to make it work. There is much more to Wine and Wineskin Wrappers than I can cover, but feel free to ask if you have questions and I will try to answer them, or tell you that I don't know myself, because I had to figure that out on my own as well (aka. Google + Trial and Error).

Let's begin!

The official Wineskin wrapper has not been updated for ages. Somebody forked the project and worked on it so 32-bit Windows applications can be run on MacOS Catalina and newer.

Download the latest Wineskin Winery from https://github.com/Gcenx/WineskinServer/releases

As of time of writing unfold "Assets" and download "Wineskin.Winery.txz" (the name of the archive with the precompiled application changed a few times, so this may not be accurate later). Direct link to the current version as of now: https://github.com/Gcenx/WineskinServer/releases/download/V1.8.4.2/Wineskin.Winery.txz

Download the Windows version of Icewind Dale 1 or 2 from GOG.

Unpack the archive and run "Wineskin Winery.app". If MacOS complains that the application cannot be opened because it cannot be trusted, right click and open it again. It should work then.

Now you have to install the proper engine that works on MacOS Catalina and up. The names of the engines that work are usually WSWine##CX64Bit#### where # are just placeholders for any version numbers. I just downloaded the most recent WS11WineCX64Bit20.0.2.

Afterwards you need to install a Wrapper. Just click the Update button to do that.

Now create a wrapper for the application you want to install. I created one called Icewind Dale.app. If the application asks you to install Gecko, you can just decline. It is just useful for applications that use the web browser.

Now that you created the blank wrapper open it in Finder by double clicking it. We have to install Icewind Dale now into that wrapper. But before we do that we have to adjust some settings of the wrapper. Click on Advanced.

The next step is necessary for the specific game I install during this process, Icewind Dale (or any older Infinity Engine game). But it illustrates how to use Winetricks to tackle problems that occur when running the game later on.

Now go to Tools and Winetricks.

Search for "csmt" and tick the check box to turn it off and then click Run.

NOTE: Should the game not run properly after installing it is very likely that you can fix it by installing libraries or enable/disable settings with Winetricks like you did now by disabling CSMT.
If you run into problems just search WineHQ for possible solutions and use Winetricks in the wrapper to apply them. https://www.winehq.org/search?q=icewind+dale

After it is successfully run click the Close button in the bottom right corner and go to Configuration and Install Software.

Click Choose Setup Executable and install the windows setup of Icewind Dale or whatever game you want to install. Just follow the installer. Give permission if MacOS asks for it. Just Exit the installer after it is finished, don't run the application yet.

Sometimes you get error messages at this point. Just click OK. Most of the time it works anyway. Click Exit to exit the GOG installer.

Wineskin will ask you to choose the EXE to run the game now. Pick the right one, but you can change it later in the configuration tab of the Wineskin Wrapper. For me it was "C:/GOG Games/Icewind Dale 2/IWD2.exe". Then click Okay.

You are all set now. Close the wrapper and double click "Icewind Dale 2.app" to run the game.

If you need to make changes to the wrapper later on just right click "Icewind Dale 2.app" and click "Show Package Contents" then open "Wineskin.app".

There is a whole lot of stuff you can do in the wrapper to make your game run smoother should you run into problems. I had to figure most of it out by myself (this whole process actually). If you run into problems basically Google and look up the game on WineHQ to see whether somebody had similar issues and whether it got solved somehow.
