So, I cannot get system shock 2 to run on the latest Mac OS even though GOG claims it works. Literally nothing happens when I try to run the program. This is using GOG Galaxy. Anyone have idea what to do? Thanks for any and all help!
There was never actually a Mac version; it's just the Windows version running in Wine. And it's an old version of Wine at this point since they haven't updated it in years. Best thing to do is download the Windows version and use it with something like Wineskin with a recent version of Wine, or Crossover.

I won't pretend to know anything about MacOS, but did you notice the restriction? (attachment)
(The game is 32-bit only and will not work on macOS 10.15 and up)

From this article: https://machow2.com/run-32-bit-apps-mac/

"macOS Ventura, Monterey, Big Sur, Catalina and M1 Macs do not run 32-bit apps or games."

and

"The only way to play 32-bit games or run 32-bit apps on macOS Ventura, Monterey, Big Sur, Catalina and M1 Macs is to install a virtual environment."

As I mentioned, it's not a Mac game in the first place, it's using Wine (and specifically an old 32-bit version). You can play 32-bit Windows games on a 64-bit-only OS like Ventura by using a newer version of Wine, which will run 32-bit games in a 64-bit prefix.
