On reddit they've compiled a list of all the games announced at Summer Game Fest 2021, let's see what might be released on GOG:

Gearbox "Tiny Tina's Wonderlands": NO
Dotemu "Metal Slug Tactics": MAYBE
Frontier Developments "Jurassic World Evolution 2": NO
Raw Fury "Sable": YES
Amazon Games and Smilegate "Lost Ark": NO (free-to-play RPG shit)
Ska Studios "Salt and Sacrifice": Probably NO
Annapurna Interactive "Solar Ash": YES when EGS exclusivity is over.
Sega and Two Point Studios "Two Point Campus": NO
Stray Bombay "Anacrusis": NO (multiplayer shit)
The Sharkmob "Bloodhunt": NO (battle royale shit)
Supermassive Games and Bandai Namco "House of Ashes": NO
Bandai Namco "Tales of Arise": NO
Blizzard "Overwatch 2": NO (multiplayer shit)
Thunderful and Wishfully "Planet of Lana": MAYBE
Sega and Amplitude Studios "Endless Dungeon": NO
Gearbox and Norsfell Games "Tribes of Midgard": Probably NO
Saber Interactive and Boss Team Games "Evil Dead: The Game": NO (multiplayer shit)
Turtle Rock Studios "Back 4 Blood": NO (multiplayer shit)
From Software and Bandai Namco "Elden Ring": NO unfortunately
Koch Media new publishing brand called "Prime Matter"(more info here):
- Payday 3 (2023): NO
- Real-time strategy game "Crossfire: Legion" (2022): MAYBE
- King's Bounty II (August 24th): MAYBE but there is still no pre-order on GOG
- Third-person Action RPG "The Last Oricru" (2022): MAYBE
- Third Person Shooter "Gungrave G.O.R.E" (2022): MAYBE
- Action Horror Game "The Chant" (Q2 2022): MAYBE
- Sci-Fi FPS "Final Form" (TBD): MAYBE
- Action RPG "Dolmen" (2022): MAYBE
- Action Adventure Game "Echoes of the End" (TBD): MAYBE
- Sci Fi Action Adventure Game "Scars Above" (2022): MAYBE
- New Painkiller is in development (TBD): MAYBE

So in total one confirmed game (SABLE), another that should be coming once the exclusivity is over, and a couple more possible releases. Then there's all the games from Koch Media, which has been pretty friendly to GOG and hopefully they'll continue the trend.
Unfortunately Bandai Namco's hostility deprives us of many possibly good games, while the rest are mostly multiplayer junk.
