rampancy: So I did some tinkering around with OpenRCT2 on my own Mac (MacBook 2,1; OS X 10.7.5). OpenRCT2 runs really well; better than I expected, in fact. The only issues I've encountered is that the menu music seems to get a little corrupted after a few minutes of looping. That and OpenGL doesn't work. However, the corruption only lasts for a few seconds, and the game runs plenty fast without OpenGL anyway, even on my GMA 950. First...
1. You don't need to apply any patches to the game. The game is already patched to its latest official version by GOG and Hasbro/Infogrames/Atari.
2. Any official/unofficial patches affect the Windows app (RCT2.EXE). Since we're not going to use the Windows app (we're going to use OpenRCT2), we don't need to worry about that.
3. Here's a rough guide to what we'll do: OpenRCT2 needs the data files (the files containing the game assets like the graphics, sounds, music, etc.) to work. The problem is that the data files are inside an installer (setup_rollercoaster_tycoon2_2.0.0.6.exe, which you downloaded after buying it from GOG) than can only run in Windows. We're going to use Wineskin to create a Mac app (Called a "Wrapper") that will run the installer (using WINE, a software package that imitates Windows). After we get the installer to run, we can take the data files, put in our copy of OpenRCT2, and we'll be all set.
Steps 1. Download and install Wineskin Winery. To save time, I'll quote

After downloading an engine using Winery (any should work for this purpose), create a new empty Wrapper (usually located in ~/Applications). The default name is "MyCoolWrapper".
Locate it and just double-click on the wrapper and a menu should appear with an "Install New Software" button.
After clicking on the "Install New Software" button you'd be prompted to select the game installer/your exe - the one you got from GOG.
Let it run through the install process. (This will most likely end with some error message - this has been happening for a while with GOG installers. Don't worry though, the installation should be finished).
rampancy: When the installer finishes, click Cancel. DO NOT tell the game to immediately run. Afterward, Wineskin will ask you what .exe to use; just click Okay.
2. Right-click/Ctrl-click on your Wrapper (named "MyCoolWrapper"). Click on "Show Package Contents". Now, go to drive_c > GOG Games > RollerCoaster Tycoon 2 Triple Thrill Pack.
The folder "RollerCoaster Tycoon 2 Triple Thrill Pack" is the folder with all of the data files you need. Copy it to your desktop.
3. Go to
https://openrct2.org/downloads and download the Mac OS X version of OpenRCT2. The build I used is 0.0.7-developb3b5631. In case there are problems, there's also a
direct download link too.
Double-click on the zip file (OpenRCT2-0.0.7.0-develop-b3b5631-macos.zip) to expand it. By default it should be in your ~/Downloads folder. What you should have is a Mac app named OpenRCT2.
(An auto-updating launcher is also available, which is supposed to automatically update your version of OpenRCT2 to the latest build. Unfortunately, it crashes on launch for me.)
4. Put your OpenRCT2 app into the "RollerCoaster Tycoon 2 Triple Thrill Pack" folder on your desktop. Double-click OpenRCT2 to play. When you first launch the game, it will ask you where the data files are; navigate to the "RollerCoaster Tycoon 2 Triple Thrill Pack" folder on your desktop, and click Okay.
Once you have OpenRCT2 running, you can move the "RollerCoaster Tycoon 2 Triple Thrill Pack" folder to wherever you wish on your computer. You no longer need the Wrapper your made earlier ("MyCoolWrapper"), so you can safely delete it in the Trash.
