Not sure this will belong to the list, but https://www.gog.com/game/warhammer_shadow_of_the_horned_rat was first released on PC, then PS1 just a year later. Both are very similar.
There's a difference between a port and a game running in an emulator. Shadow Madness for example, is an emulated PS1 game not a port based on the PS1 version. I'm not saying such games shouldn't be included in this topic, but there should be some differentiation between ports and emulation.

JoaoPauloZA: quick question. Whatever happened to Soul Reaver? I thought it was on GoG back in 2012. Now, it is listed as coming soon or TBA and says Square is working on updates. When did that happen? I've never known Square to actually fix much. I liked the PC version better to be honest though...better graphics, but some shoddy FMVs.
Who knows. Maybe they are doing a full remake; Though Soul Reaver was only the first part of the first game since it was so big they had to split it and Soul Reaver 2 was put on the PS2 instead of the PS1; Along that quite a few things were cut but you could find remnants of code.

Silicon knights i believe did Soul Reaver before, but they lost against Epic with the 'Too Human' lawsuit and went under, or that's the short of it anyways. As for Square... Couldn't say.

MISSIONS : IMPOSSIBLE N64 and PSX port to PC GOG
Just doing a quick reference before posting, I discovered that Urban Chaos was actually a PC game first, it certainly feels like a PSOne game at heart though.

True, I'll cut it. Surprised me too.
Bit late to the party here, but Gex originated in the 3DO and not the PS1. It received a PS1 port 8 months later, as Crystal Dynamics quickly realized that the system wasn't moving software sales.
