Star Wars : Bounty Hunter has been updated on GOG with the latest patch.

Patch 2 changelog:

- Fixed an issue where Jango would occasionally get stuck in a hanging animation when trying to roll down an exit.
- Fixed an issue where button inputs performed while in a cutscene would count as in-game inputs.- Made various improvements to Mouse and Keyboard control functionality.
- Made various graphical improvements for all platforms.- There are no longer invisible grabbable edges on Chapter 2, Level 3: Upper City.

While I tend to have a strong distrust against GOG when they keep silent, in my experience they tend to be much more trustworthy when they accept to communicate about something. So if they say the DRM-free installers are on their way (and even explain why there is a delay), I do believe them.
The offlines installers for the latest patch are up now. Iinterestingly they are much smaller. I think the old one had like 3-4 big parts and now its just one big 2.5GB part

It 4.6 GB split in 4 parts before, now as you say it's 2.6 GB in all. Better compression or they cut something?

Edit: Just installed the new version (hadn't tried the previous one), 2.43 GB installed, definitely not better compression. And includes both 32-bit and 64-bit. Anyone tried the previous version to know what changed?

There is a similar change with The Night of the Rabbit btw. The offline installer is not updated yet and it is 5.7GB. If I try to instal the latest version with Galaxy the size now is only 3.4GB. I was thinking since these games seem to be old could it be they used some more recent techs to compress files like video files for example (or something related to textures)

Binding of Isaac. The game didn't get on gog until 2021, doesn't have linux support despite steam having it, is behind on updates, doesn't have daily challenges, and the og flash version still isn't on gog.
Looking at the reviews of Yet Another Fantasy Title, it seems the game is here in an unfinished state, and either way GOGDB lists the last update as April 23, while elsewhere there was a major one in May.
Turmoil's entry severely downplays the issues. The GOG version seems to be missing a multiplayer mode and one of the DLCs (the recent "Deeper Underground"). Versions on the other platforms receive semi-frequent updates, and PCGW even lists the GOG version as abandoned.

TES: Oblivion is missing German, French, Italian subs and Spanish subs compared to Steam version.

Splinter Cell is missing French compared to Steam, but has German instead. I'd be curious to know why.

Also maybe Project Zomboid would deserve a mention. The store page does mention that you cannot play multiplayer with Steam users, but neglects to mention that Steam Workshop has a lot more and a lot simpler installation of mods (have to manually download them from pages on the forum if you have a GOG version). Steam users also can opt into unstable versions, such as the current Build 42, which is currently not available in any way to GOG customers.
Edit: Actually the "crossplay is not available" note on the store page seems to be untrue, but apparently the dedicated server executable is just not available to GOG customers.

Build 42 is available via galaxy on unstable branch.
I can also create my own server to play with my friend via direct IP connection with no problems (at least I could do this on build 40 - didn't played after that).

Ah, I see, I don't use Galaxy, so I didn't know that. I guess not being able to download an offline installer for it is more of a GOG issue, then :/

Also I just noticed that the dedicated server batch file seems to be in fact shipped with the GOG version, so that's not an issue either.

When build 41 was unstable - there was separate offline installer for it.
As far as I know - it was created by dev's via GOG builder.

So maybe you can ask dev's to create unstable offline installer.
