To play offline in Elden Ring, go to System > Network and change Launch Setting to Play Offline. You can do this from the main menu or in your save, though you may have to relaunch for the change to take effect.

When you’re playing offline in Elden Ring, you won’t be able to summon other players, see their spirits, or read their messages.
Do you think this is forbidden knowledge? Being an option in the main menu means it's not even hidden, anybody who wants offline play is welcome to it and I have yet to play any From Software game any other way.

appreciate the tip! when I get elden ring I will be sure to do this.
Starting steam in offline mode has been a reliable way to keep all the Souls games offline for ages, this isn't anything new. The real big brain move was the one done by FromSoft, which is keeping DS1 and DS2 offline by their own choice because of a multiplayer vulnerability they haven't patched for 6+ months.
