I know you can change graphics in-game, but does this release include the original as it was?

Yes, you can extract it and run the original game in ScummVM.

One can put everything as if it were the original (Graphics, Audio, Voices) but it does not come with the original game separately. I did not know that this could be done. Thank you! :)

I know that it allows you to switch in game graphics to be the old one like halo did on Xbox. pretty neat feature if you ask me.

ScummVM is not the original game, it is 99% accurate reverse-engineered reimplementation, but not the original.
