Seeing a lot of handheld pc's popping up so how well do GOG games play out of box on them?
That's a question of absurd broadness. It depends on the game and your input method, largely.
Well, I'd imagine being a Windows device, they probably play about as well as they do on a PC. I know virtually everything I've played from here works pretty well on my Steam Deck. I can't remember the last game I installed that didn't work. In fact, I'm currently playing 9 Years of Shadows and There is No Light on my Steam Deck with no issues, including cloud saves and such.

Some games may not work, but I'd gather that the fail rate is on par with other Windows PCs. The main issue will be controls as the Ally has no track pads. I'd recommend the Legion Go if you want a Windows handheld, unless you're gonig to use an external kb/M for the games that require it, or won't play those kind of games at all. Though I'm still quite pleased with VALVe's Steam Deck.

You only have to install Bazzite to use it like a Steam Deck .
