I'd like to revive this thread to recommend Outward. It's a game I picked up on sale recently and it's definitely scratching that open-world itch in a way that I've rarely seen any other game of its kind do. It takes some clear inspiration from Breath of the Wild in terms of its crafting mechanics, but it also has a heavy focus on survival (you need to eat, drink protect yourself from the cold, etc.) and most of your game time will be spent just wandering around the world map.

Like Morrowind, this is a game where the side content is leaps and bounds more engrossing than the main questline and you're likely just going to be spending most of your time exploring, a task made all the more engaging by the fact that your map has no location marker so you HAVE to pay attention to the landscape figure out where you are on it. Also like Morrowind, the game heavily encourages repeat playthroughs by way of factional alliances. While there's only three main factions, each one offers something different and you'll have to play at least three times to get the full experience.

Magic is unique in that you have to do a ton of preparation before you can cast any spell whatsoever (and you even have to complete a quest before you even get a mana bar), and a lot of it involves combining runes into different effects. While there's less customization than in Morrowind the sheer level of involvement required to use any skill or spell means there's a huge number of options for customizing your abilities and playstyle.
