I want to buy some games off of GOG to give as Christmas gifts.

I see that you can gift games to people if you know their email address. But, doesn't this mean they will know what their gift is as soon as they check their email?

How can I buy a game for someone now, and not have them know about it until Christmas day?

Have the gifts sent to your own email address. Then you can give people the gift keys whenever you want.

Just enter your own e-mail address when buying games as a gift. You'll get the e-mails with the gift codes and they will also show up in your account under "orders + settings". They won't expire so you can gift them whenever you want.
After emailing the gift to yourself and when you are ready to send the message (either by email or chat), copy the game key code and then you can set it up in a link so all he or she has to do is click this:

www.gog.com/redeem/[insert game key here]

Thanks for the tips. I gave it a try. One thing though...

I bought a few games all at once, for different people, and gifted them to myself. However, all the games I purchased seemed to be welded together with one single gift key. Is there any way to split this key up and send each game to a different person?

Unfortunately, no. You'll have to contact support for this. Go here: http://www.gog.com/support/contact/my_orders_and_payments , select order change (from regular to gift order) and explain to support that you would like to split your one big key into many smaller ones. Don't forget to provide them with the order's number.
