My favorite game question is, by far, "does it have achievements".
As for the games themselves, I'm still faithful to my old loves, like AvP (my first real fps, had terrified me - that said it had the better wall monitor actor), NOLF (coolest writing, level design and setting), Fallout1&2 (best post-ap universe ever, love its grit, humour and melancholy), and maybe Stalker for its atmosphere (guitar around the fire, etc).
But my desert island games would probably be Total War (maybe Medieval 2, but any would do), Men of War (again, who cares which one) and Master of Magic.
Since the Amiga, I used to consider Pirates and Elite as my top favorites, but maybe I managed to tire of them a bit, through the years. And Covert Action has fascinated me enough to deserve the mention too.
I usually like games that manage to be everything at once. Like Covert Action (and all its coherent minigames), Total War (strategy and tactic), Men of War (from battle-scale to unit scale), etc...
